Bakery Style Almond Croissants

Day-old croissants Almond flour Granulated sugar Almond or vanilla extract Egg Unsalted butter Salt Sugar Water Powdered sugar Almonds

Combine the sugar syrup ingredients in a pan on the stovetop until the sugar is melted. Or you could microwave instead. Once melted, then set aside.

Add the room-temperature butter and mix well; you can use a spatula or your hand to help.

Add the egg, and mix well again before adding the vanilla extract.

Slice the croissants in half, either all the way or enough to make a pocket.

Brush the inside of the croissant with about 1 tablespoon of the syrup.

Spoon a few tablespoons of the butter inside and then close the croissant.

Place all of the filled croissants on a lined baking tray, and brush the top of the croissants with the remaining almond cream.

Add sliced almonds and bake at 350 for 12-15 minutes or until the almonds are golden brown.
