Bakery Style Almond Croissants

- 4 large day-old croissants
- ¾ cup almond flour
- ⅓ cup granulated sugar
- ½ teaspoon almond or vanilla extract
- 1 large egg room temperature
- 4 tablespoons unsalted butter room temperature
- pinch salt
Sugar Syrup
- ¼ cup sugar
- ⅓ cup water
- Drizzle of almond or vanilla extract
Combine the sugar syrup ingredients in a pan on the stovetop until the sugar is melted. Or you could microwave instead. Once melted, then set aside.
Add the room-temperature butter and mix well; you can use a spatula or your hand to help.
Add the egg, and mix well again before adding the vanilla extract.
Slice the croissants in half, either all the way or enough to make a pocket.
Brush the inside of the croissant with about 1 tablespoon of the syrup.
Spoon a few tablespoons of the butter inside and then close the croissant.
Place all of the filled croissants on a lined baking tray, and brush the top of the croissants with the remaining almond cream.
Add sliced almonds and bake at 350℉ for 12-15 minutes or until the almonds are golden brown.
- Don’t add too much almond cream as the croissant might get soggy! It is recommended that you use 2 tablespoons for each one.
- Don’t serve it when it’s fresh out of the oven, wait at least 5 minutes for it to cool down. I promise you it tastes so much better!
- To ensure that your croissants remain crispy, let them cool on a wire rack, not on a baking sheet.
