Bakery Style Almond Croissants

Ingredients
  

  • 4 large day-old croissants
  • ¾ cup almond flour
  • cup granulated sugar
  • ½ teaspoon almond or vanilla extract
  • 1 large egg room temperature
  • 4 tablespoons unsalted butter room temperature
  • pinch salt

Sugar Syrup

  • ¼ cup sugar
  • cup water
  • Drizzle of almond or vanilla extract

Toppings

  • Powdered sugar
  • Almonds

Instructions
 

  • Combine the sugar syrup ingredients in a pan on the stovetop until the sugar is melted. Or you could microwave instead. Once melted, then set aside.
  • Add the room-temperature butter and mix well; you can use a spatula or your hand to help.
  • Add the egg, and mix well again before adding the vanilla extract.
  • Slice the croissants in half, either all the way or enough to make a pocket.
  • Brush the inside of the croissant with about 1 tablespoon of the syrup.
  • Spoon a few tablespoons of the butter inside and then close the croissant.
  • Place all of the filled croissants on a lined baking tray, and brush the top of the croissants with the remaining almond cream.
  • Add sliced almonds and bake at 350℉ for 12-15 minutes or until the almonds are golden brown.

Notes

  • Don’t add too much almond cream as the croissant might get soggy! It is recommended that you use 2 tablespoons for each one.
  • Don’t serve it when it’s fresh out of the oven, wait at least 5 minutes for it to cool down. I promise you it tastes so much better!
  • To ensure that your croissants remain crispy, let them cool on a wire rack, not on a baking sheet.
