Zaatar and Cheese Breakfast Bake

This is an on-the-go breakfast of one dish. By just mixing and then baking flour with zaatar, cheese, and other additives, you will get a tasty breakfast that fits all, including picky eaters.

1 cup flour ½ tablespoon baking powder ½ cup fresh zaatar leaves or oregano ¼ cup milk ⅔ cup yogurt 2 large eggs ¼ cup extra virgin olive oil ½ teaspoon salt 1 tablespoon lemon zest ½ cup Akawi or Nabulsi cheese soaked to get rid of excess salt. Add more or less to taste. 1 teaspoon sumac optional ¼ cup zaatar Optional, for topping sesame seeds for topping black seeds for topping
In a large mixing bowl, crack the eggs, and add the lemon zest to the eggs in the bowl.
Drizzle the olive oil over the eggs.
Add the yogurt, and the milk and whisk them all manually until you get a smooth mixture.
In another bowl, mix the dry ingredients - flour, baking powder, fresh zaatar leaves, sumac (if using) and salt.
Add the previous mixture to this dry combination, and blend them all together to get a cake like batter.
Pour half of the batter into a sprayed and lined 9 inch pan.
Add the cubed cheese.
Top with the remaining batter. Now, if you'd like, top with zatar, sesame seeds, and black seeds.
Bake it in a preheated oven at 350 F for 15-25 minutes or until a toothpick comes out clean.
Wait till it cools off, cut it into pieces, and serve with labaneh and tomatoes, olives and pickles for a full Palestinian style breakfast.
You can prepare the baking dough ahead of time and keep it refrigerated, but make sure to cover and seal it tightly.
When you get it out of the fridge, let it rest at room temperature for 20-30 minutes, and then bake it.
Make sure that all ingredients are at room temperature for the bake to rise and become soft.
To enhance the zaatar flavor even more, you can sprinkle the cut pieces with the dry zaatar paste.
