Easy Chicken Buffalo Quesadillas

Easy and quick crunchy seasoned chicken quesadillas. Made the Mexican way with extra cheese and sour cream dip.

Shredded Chicken Seasoning
- 1 pound chicken breast or 2 cups of rotisserie chicken
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- 2 tablespoons oil
Shredded Chicken
- ⅔ cup buffalo sauce
- 3 tablespoons melted unsalted butter
- 1 tablespoon powdered ranch seasoning or 2½ tablespoons regular ranch dressing
- sour cream
- tortillas
- green onions
- Shredded Mexican blend Cheese
Mix well.
Brush your flour tortillas with your desired amount of sour cream.
Add the chicken.
Top with shredded Mexican blend cheese and green onions.
Close and pan-fry until crispy or into a panini press to crispen up.
Serve with sour cream, ranch dressing, or blue cheese dressing.
- Make some quesadillas extra cheesy for cheese lovers, and add the sauce according to taste.
- Rotisserie Chicken is the best option to use.
- Offer different dips for different tastes.
