Chicken Fajita is a known Mexican dish. It consist of tortilla bread filled with delicious chicken and creamy cheese. It is very quick to assemble and very tasty!
Add oil to a pot and let it heat up before adding the sliced chicken. Sauté for a bit until it releases some juice, and add the spices.
Mix around and cook all the way through, about 10-15 minutes. Remove and set aside.
In the same pot, add 1 tablespoon oil to deglaze then add the onions and bell peppers and sauté on high heat for 5-7 minutes, moving them around often so they don't burn.
Add back the chicken and toss together, and remove from the heat.
For Assembly
Take 1 tortilla and add 2 tablespoons sour cream and spread.
Add the fajita filling and top with hot sauce, taco sauce, or siracha mayo. You can also add avocado here.
Add cheese, and fold in half. Press until both sides crisp up and the cheese melts.
Notes
You can rub the seasoning and salt in advance on your chicken.
Avoid overcooking and drying out the chicken by cutting the chicken into strips.
You can add a splash of soy sauce instead of salt to make it more tender.
Don't forget to heat the pan, add in the olive oil and wait for the oil to begin to shimmer.
