Ingredients

  • 3 tablespoons oil
  • pounds large stew chunks
  • medium yellow onions
  • tablespoons garlic paste or 5 fresh cloves
  • ½ tablespoon ginger paste or ½ inch cube
  • cups tomato sauce
  • ¼ cup water
  • 1 cup whole milk plain yogurt
  • teaspoons garam masala
  • teaspoons curry powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • teaspoons coriander powder
  • 1 teaspoon bullion powder
  • ½ teaspoon turmeric
  • ½ teaspoon black pepper
  • 2 teaspoons salt

Instructions

  • Press the sauté button on your instant pot.
  • Sauté the onion in oil until slightly browned, then add the ginger and garlic pastes and sauté until fragrant.
  • Add the beef and the spices and mix.
  • Let it cook for 3 minutes, sautéing occasionally, and add the water.
  • In a bowl, whisk together the yogurt and tomato sauce well, then pour it into the beef and mix.
  • Cover and seal the instant pot lid, then turn off sauté mode and turn on Manual Pressure. Put manual pressure on high for 35 minutes.
  • Once the pot has finished cooking, immediately release the steam. Mix well and serve with rice or naan.

Notes

  • Since cornstarch might change the flavor, we don't recommend you to add it to the curry. To thicken the curry, you can simply cook it uncovered until the extra liquid evaporates.
  • It's possible not to saute onions, but I recommend doing so since it adds a fantastic flavor and aroma.
  • Use a decent piece of beef, preferably one that is boneless. Although we don't marinate the beef for this curry, feel free to do so with yogurt and spices.
  • If you like to add potatoes to your beef curry, just cook them separately and add them to dish before serving.
