Ingredients
  

For the Chicken

  • pounds chicken thighs boneless and skinless
  • tablespoons dried oregano
  • 1 tablespoon fresh oregano finely chopped
  • 4 cloves garlic minced
  • ¼ cup extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • pinch of turmeric
  • ½ teaspoon coriander powder
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • juice of 1 lemon
  • 3 tablespoons full-fat Greek yogurt

For the Tzatziki Sauce

  • 1 cup full-fat Greek yogurt
  • 1 tablespoon dill finely chopped
  • 1 teaspoon salt or to taste
  • 3 small garlic clove finely minced
  • tablespoons olive oil
  • ¼ teaspoon black pepper
  • ½ tablespoon chopped mint optional, but so good
  • tablespoons lemon juice
  • ½ large English cucumber peeled and grated

Instructions
 

To Make the Chicken

  • Add all the marinade ingredients together in a large bowl before adding the chicken thighs to marinate them.
  • When the marinated chicken thighs are ready, transfer them to a slightly oiled skillet on medium heat and grill them for about 5-6 minutes per side, until done.
  • Set them aside to rest, covered, before slicing.

To Make the Tzatziki Sauce

  • Peel the cucumber and grate it finely.
  • Transfer the peeled and grated cucumber to paper towels and squeeze all the liquid out. You won’t need the liquid.
  • In a bowl, combine the cucumber with the rest of the ingredients and you’re ready to serve.

To Assemble

  • Warm your pita or flatbread.
  • Spread some tzatziki sauce.
  • Add your chicken.
  • Add chopped tomatoes, cucumbers, and red onions, and top with more tzatziki sauce.

Notes

  • When you marinate chicken thighs, make sure that they are well coated with the marinade.
  • It is better to marinate the chicken thighs for a minimum of 4 hours. The longer you marinate it, the juicier and more tender the chicken gyros will be.
  • The cooking time depends on the size and thickness of the chicken thighs. It also depends on the cut you use.
  • For best results, let the cooked chicken thighs rest for 3-5 minutes covered before slicing them to allow the juices of the marinade to redistribute throughout the flesh.
