Ingredients

  • 3½-4 pounds bone-in chicken thighs about 6-8 thighs
  • teaspoons garlic powder
  • teaspoons onion powder
  • ¼ teaspoons turmeric
  • teaspoons salt
  • ½ teaspoon black pepper
  • 1 teaspoon chili powder
  • teaspoons coriander powder
  • ½ teaspoon cumin
  • cup harissa paste mild or hot
  • 6 garlic cloves
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • cup honey
  • 3 tablespoons water
  • quarter of a lemon thinly sliced

Instructions

  • Add the clean thighs to a bowl.
  • Sprinkle the seasonings on top, and add the harissa paste, honey and olive oil.
  • Add the lemon juice and finely chopped garlic, and mix together well.
  • Add the 3 tablespoons of water to the bottom of the pan. Sprinkle around the thinly sliced lemons.
  • Place on a baking sheet and bake uncovered at 400°F for 30 minutes, then cover for another 30-40 minutes.
  • Broil chicken for 1-2 minutes until the skin gets crispy.

Notes

  • For BEST seasoning method, add the garlic, honey, olive oil, harissa and seasonings to a small food processor. Process until smooth then add to the chicken.
  • To get crispy harissa garlic chicken, pat it dry after rinsing. Pat drying before baking helps to get rid of the moisture and that makes your skin chicken golden crispy.
  • For optimal flavor infusion, marinate the chicken thighs for at least 2 hours, or better yet, overnight.
  • Add all the flavorful chicken marinade in the baking sheet as the gravy marinade will enrich the chicken flavor during cooking.
  • For best results, let the chicken rest for 5-10 minutes before serving it.
