Instructions
For the Pumpkin Donut Dough
Preheat your oven to 350°F and ensure your donut pans are greased with cooking spray.
In a bowl, combine the salt, flour, baking soda, baking powder, cinnamon, and pumpkin pie spice.
Layer the pumpkin purée, eggs, oil, sugar, melted butter, and vanilla directly on top. Whisk everything together thoroughly until completely incorporated.
Transfer the batter into a Ziplock bag or piping bag, cutting off the tip, and evenly distribute it into 14-16 donut cavities.
Bake the donuts at 350°F for 10-14 minutes, watching for slightly browned edges. To check for doneness, you can gently press your finger into one; it should bounce back, or insert a test skewer – it should come out clean
Allow the donuts to cool in the pan for 5 minutes before transferring them onto a wire rack.
For the Cinnamon Sugar Topping
Whisk the granulated sugar and ground cinnamon together.
While the donuts are still slightly warm, brush them with melted butter and coat them generously in the cinnamon sugar mixture for a delectable finish.
Notes
Ensure you're using pure pumpkin puree (not pumpkin pie filling), as it provides the best pumpkin flavor.
Have your eggs and dairy ingredients at room temperature for better incorporation and a smoother batter.
Mix the batter just until the ingredients are combined. Overmixing can result in dense donuts.
Use a non-stick donut pan and grease it well with cooking spray or butter to prevent sticking.
For neat and even donuts, use a piping bag or a large Zip lock bag with a corner snipped off to fill the donut cavities.
