Easy Greek Style Baked Chicken

Ingredients
  

  • 4 whole chicken leg quarters (or sub 6-8 bone in thighs)
  • 3 idaho potatoes cubed
  • ¼ cup olive oil
  • cup yogurt *I prefer using MAYO instead of yogurt. Adds the perfect extra fat and flavor to the chicken while keeping it moist.
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon tried thyme
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • teaspoons salt
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • ½ teaspoon turmeric optional

Instructions
 

  • Line your baking sheet with parchment paper.
  • Peel and cut your potatoes into 2 inch cubes and place them in the baking tray.
  • Add your chicken.
  • Add all the seasonings, yogurt, olive oil and lemon juice and lemon zest on top of the chicken.
  • Mix everything together well, making sure to get the seasonings under the skin too.
  • Bake at 400°F, initially covered for 45 minutes, then uncovered for another half hour.
  • If needed, broil to crisp for 1 to 2 minutes on high.
