Easy Greek Style Baked Chicken

4 whole chicken leg quarters (or sub 6-8 bone in thighs) 3 idaho potatoes cubed ¼ cup olive oil ⅓ cup yogurt *I prefer using MAYO instead of yogurt. Adds the perfect extra fat and flavor to the chicken while keeping it moist. 1 teaspoon garlic powder ½ teaspoon onion powder ½ teaspoon dried basil 1 teaspoon dried oregano 1 teaspoon tried thyme ½ teaspoon black pepper 1 teaspoon smoked paprika 1½ teaspoons salt 3 tablespoons lemon juice 1 tablespoon lemon zest ½ teaspoon turmeric optional
Line your baking sheet with parchment paper.
Peel and cut your potatoes into 2 inch cubes and place them in the baking tray.
Add your chicken.
Add all the seasonings, yogurt, olive oil and lemon juice and lemon zest on top of the chicken.
Mix everything together well, making sure to get the seasonings under the skin too.
Bake at 400°F, initially covered for 45 minutes, then uncovered for another half hour.
If needed, broil to crisp for 1 to 2 minutes on high.
