Ingredients
  

  • pounds bone-in chicken about 6 leg quarters
  • 3 large potatoes peeled and cut into chunks
  • teaspoons garlic powder
  • teaspoons onion powder
  • teaspoons paprika
  • 1 teaspoon coriander powder
  • ½ teaspoon black pepper
  • teaspoons salt
  • ¼ teaspoon turmeric
  • 2 tablespoons extra virgin olive oil

Lemon Garlic Sauce

  • 10 cloves garlic
  • ½ cup lemon juice
  • cup extra virgin olive oil
  • cup cold water
  • 1 teaspoon aleppo pepper

Instructions
 

  • Clean the chicken and pat it dry using a paper towel. Add it to a 9x13 pan that’s lined with parchment paper. Add the peeled potatoes.
  • Mix the garlic and onion powder, paprika, coriander, salt, black pepper, and turmeric.
  • Sprinkle the spice mixture all over the chicken and potatoes, making sure to get it under the skin.
  • Drizzle two tablespoons of olive oil and rub it all over.
  • Bake in a preheated oven at 425℉ for 30 minutes, uncovered.

For the Garlic Lemon Sauce

  • Crush the garlic using a mortar and pestle, or you can mince it as well, but it releases less garlic flavor.
  • Add the crushed garlic to a bowl along with the water, extra virgin olive oil, lemon juice, and aleppo pepper.
  • You could also zest some lemon for extra flavor.
  • Pour this all over the chicken and potatoes, and cover with aluminum foil.
  • Return to the oven for another 30-40 minutes, or until the chicken reads an internal temperature of 165℉.
  • Broil for a minute or two to crisp up the skin and enjoy with pita bread.

Notes

  • Allow the chicken to marinate in the spices mixture for at least 30 minutes, or preferably overnight in the refrigerator.
  • Once the chicken is cooked, allow it to rest for a few minutes before serving.
  • The recipe yields crispy chicken, but you can broil it for extra crisp too.
