Lentil Soup (Shorbet Adas) is a traditional Lebanese dish that is hearty, delicious, heartwarming, and nutritious. It is the perfect soup for winter and Ramadan. Everyone will pour a second bowl of it! Sahtein!

Equipment

Ingredients
  

  • 1 cup lentils  red
  • 6 cups water or broth if using broth omit bouillon
  • 1 teaspoon cumin
  • 1 teaspoon coriander powder 
  • teaspoon ginger powder 
  • ½ teaspoon onion powder 
  • ½ teaspoon garlic powder 
  • teaspoon black pepper 
  • 1 teaspoon salt
  • 1 tablespoon  bouillon vegetarian/vegan
  • 1 small russet potato diced
  • ¼ cup carrots
  • 1 stalk celery optional
  • ½ yellow onion
  • 2 tablespoons olive oil extra virgin

Instructions
 

  • Add the olive oil to a pot, then add the finely diced onions. 
  • Sauté until brown, then add the lentils and mix. 
  • Add the veggies, diced small.
  • Add the spices, then hot water, and let it come to a boil before covering it and letting it simmer on low heat for 30 minutes.
  • Transfer to a blender or use an immersion blender to blend until smooth. Hit again before serving.

Notes

  • The water measure is up to your taste, you can keep adding more water if you want your Lentil Soup thinner, or on the opposite, add less water if you want it thicker.
  • There is no need to complicate your life and pre-soak those lentils before! They will be cooked in no time!
