Equipment

  • Stand mixer

Ingredients

  • 5 cups all-purpose flour
  • ½ cup vegetable oil corn oil, canola oil, or olive oil
  • 1 tablespoon active dry yeast
  • 1-2 tablespoons sugar ¼ cup for sweeter dough
  • 3 tablespoons powdered milk optional, see notes
  • 1 teaspoon salt
  • 2 cups warm water or warm milk for softer dough
  • 1 teaspoon baking powder

Instructions

  • In a large bowl, start by mixing the following 2 cups of all-purpose flour, active dry yeast, sugar, baking powder, powdered milk, and salt. Then, add warm water. I recommend using warm milk for a softer dough.
  • Mix them all together until it's smooth using your hands or a stand mixer. It'll be liquidly, but that's fine. Cover it, and let it sit in a warm place for 10-15 minutes until it becomes bubbly. You can cover it with a blanket or two.
  • Once the 10 minutes are over, add 3 cups of all-purpose flour and the oil to the dough. Mix them well.
  • Knead it for about 5-10 minutes. It will come together really quickly.
  • Now, it's ready to use for anything your family asks for.
  • Check notes for which doughs I recommend an eggwash for.

Notes

  • This dough needs around 10 minutes to rise.
  • Spray cooking oil or put some oil on your hand to make it easier for you to work with the dough especially if you are turning it into balls.
  • Cover the dough mixture with a blanket or two. You can also place it next to a heat source like a chimney during winter or the top of a stove while preheating. This will help it rise quickly.
  • Attention! The water or milk you use should be warm. You can test it with your fingertip. If it is too hot, it would kill the yeast. Then, your dough will not rise. If it is cold, the yeast will take longer to activate and your dough will need a longer time to rise.
  • I recommend an egg wash for any CLOSED pastry you make with this dough. Buns, spinach pies, closed meat pies, stuffed buns, etc.
  • I recommend adding powdered milk. If you're not using powdered milk, then I recommend at least substituting the warm water for warm milk. The recipe does NOT use more than 2 cups of liquid.
