What Makes It Your Go-To Dough Recipe

You will fall in love with this recipe, so be sure you save it for later.

This recipe saves you a lot of time. It only needs a couple of minutes to knead and 10 minutes to rise. That’s it! So, whenever you want to fill your family’s tummy with something yummy, you can prepare this quick dough and leave it to get ready while you prepare the toppings or fillings. An absolute lifesaver for your bustling daily routine!

Turning Dough Fails into Wins: Quick Fixes!

Encountering dry or firm dough? No worries! Simply add a bit more warm milk and knead until you get the perfect texture.

Should stickiness be the issue, just add some flour while kneading, transforming it into a soft and airy delight.

Now, if your dough does not rise within the expected ten minutes, be patient and give it some extra time. If it does not rise at all, then the yeast you used is too old.

If your dough is runny, excess water or milk might be to blame. To fix this, gradually add a tablespoon of flour and knead until you get the desired result.

Multi-Use Dough

In a moment, whip up something fantastic! Grab common pantry items, and make this dough for fatayer, manakeesh, buns for sliders, desserts, cinnamon rolls, and pizzas. After just a 10-minute rise, it’s good to go, easy-peasy!

What You Need

All-purpose flour: It makes the dough perfect for anything you like to prepare.

Yeast: I use active dry yeast, make sure it is not too old.

Sugar: If your recipe calls for a sweeter taste, add up to ¼ cup of sugar.

Baking powder: You can omit it, but it gives the dough a softer texture.

Powdered milk: If you’re not using powdered milk, I highly recommend swapping out at least 1 cup of warm water for 1 cup. This helps the dough stay soft and squishy for longer.

Salt: It is essential to give you the perfect texture and help yeast work properly.

Warm water or warm milk: I recommend using warm water since it keeps the dough soft for longer.

Vegetable oil: You can use corn oil or canola oil. You can also use olive oil if you like the taste to be more prominent.

Steps to Prep

First, in a large bowl, start by mixing 2 cups of all-purpose flour, active dry yeast, sugar, baking powder, powdered milk, and salt. Then, add warm water. I recommend using warm milk for a softer dough.

Next, mix them all together well. The mix will be liquid, but that’s fine. Cover it and let it sit in a warm place for 10–15 minutes. You can cover it with a blanket or two.

Then, after 10 minutes, add 3 cups of all-purpose flour and oil. Mix them well.

Finally, knead it for about 5-10 minutes. It will come together really quickly.

It is now ready to use for anything your family might ask for.

But wait, there’s more of what makes you love the ten-minute multi-purpose dough. The potential for culinary exploration with this ten-minute dough is boundless.

Who could resist sinking their teeth into a perfectly Golden Bun with Zaatar and Cheese? A true morning treat! Or perhaps indulging in Chicken Musakhan Sliders for a satisfying lunch. And let’s not overlook the incredible Date-Filled Brioche Buns, a delightful snack for any hour. If you want to enjoy something with outstanding taste, use this recipe to make the best Middle Eastern Spinach Fatayer.

A dough ball ready to be used in other recipes.
Mix, knead, rise, and there you have it!

This dough needs around 10 minutes to rise. You can leave it a bit longer for a better texture.

If you are making buns or cinnamon rolls, allow them to rest for 5–10 minutes after forming the dough into balls. But if you are making cheese and meat pies, you can skip this step.

Spray cooking oil or put olive oil on your hands to make it easier for you to work with the dough, especially if you are turning it into balls.

Cover the dough mixture with a blanket or two. You can also place it next to a heat source, like a chimney in the winter or the top of a stove while preheating it. This will help the mixture rise quickly.

If you want to please a larger crowd, you can simply double the ingredients.

Attention! The water or milk you use should be warm; you can test it with your fingertip. If it is too hot, it will kill the yeast, and your dough will not rise. If it is cold, the yeast will take longer to activate, and your dough will need longer to rise.

Frequently Asked Questions (FAQs)

Can I use plant-based milk to get vegan-friendly dough?

Yes, you can. The dough will be perfect for some vegan baked goods.

Can I use whole wheat flour instead of all-purpose flour?

Absolutely! While all-purpose flour is commonly used, you can experiment with whole wheat flour for added nutritional value. Keep in mind that the texture and rise might vary slightly, so adjust the liquid content accordingly, as whole wheat flour can absorb more moisture.

Do I need any specific tools to make the ten-minute multi-use dough?

This dough is so easy. No fancy kitchen gadget is needed. You need a mixing bowl, measuring cups and spoons, and a spatula.

Equipment

  • Stand mixer

Ingredients

  • 5 cups all-purpose flour
  • ½ cup vegetable oil corn oil, canola oil, or olive oil
  • 1 tablespoon active dry yeast
  • 1-2 tablespoons sugar ¼ cup for sweeter dough
  • 3 tablespoons powdered milk optional, see notes
  • 1 teaspoon salt
  • 2 cups warm water or warm milk for softer dough
  • 1 teaspoon baking powder

Instructions

  • In a large bowl, start by mixing the following 2 cups of all-purpose flour, active dry yeast, sugar, baking powder, powdered milk, and salt. Then, add warm water. I recommend using warm milk for a softer dough.
  • Mix them all together until it's smooth using your hands or a stand mixer. It'll be liquidly, but that's fine. Cover it, and let it sit in a warm place for 10-15 minutes until it becomes bubbly. You can cover it with a blanket or two.
  • Once the 10 minutes are over, add 3 cups of all-purpose flour and the oil to the dough. Mix them well.
  • Knead it for about 5-10 minutes. It will come together really quickly.
  • Now, it's ready to use for anything your family asks for.
  • Check notes for which doughs I recommend an eggwash for.

Notes

  • This dough needs around 10 minutes to rise.
  • Spray cooking oil or put some oil on your hand to make it easier for you to work with the dough especially if you are turning it into balls.
  • Cover the dough mixture with a blanket or two. You can also place it next to a heat source like a chimney during winter or the top of a stove while preheating. This will help it rise quickly.
  • Attention! The water or milk you use should be warm. You can test it with your fingertip. If it is too hot, it would kill the yeast. Then, your dough will not rise. If it is cold, the yeast will take longer to activate and your dough will need a longer time to rise.
  • I recommend an egg wash for any CLOSED pastry you make with this dough. Buns, spinach pies, closed meat pies, stuffed buns, etc.
  • I recommend adding powdered milk. If you’re not using powdered milk, then I recommend at least substituting the warm water for warm milk. The recipe does NOT use more than 2 cups of liquid.

I used a slightly different recipe (one 10 min dough in the zaatar cheese bread recipe). I used the 1 cup warm milk only cuz I happen to have milk in the house. I used one tbsp sugar. Very easy, very fluffy, very easy to work with. Would make this again 100%.

This dough is excellent!. I do have a question: How do I store the rest of the unused dough?

I learned Miluhije, Mansaf, Kufte, Maqloobe…. Almost all Arabic dishes, but I could never perfects the dough ones like fatair and pita breads… my mother in law taught me all with eye balling and I couldn’t succeed at all… well- it all changed the minute I found this recipe on IG… precise measurement for dough newbies… now I am teaching my girls the same…

Love the bread made 6 rolls instead of 4 on small batch, but you don’t seem to have mentioned anywhere that I can see, at what temperature small batch dough and ten minute dough should be cooked and how long for and where in the oven, near the bottom, top or in the middle. I baked at 240 on the shelf below the middle, but kept checking was a bit worried. I would appreciate to know what temperature you cook at.

    1. Fatimah says:

It just depends on what you use it for. How thick you’re using the dough. Thats why i mention to refer to each recipe that you’d like to use it for:) generally, 450 works for my oven.
