What Ingredients Do You Need?

For the Dough

Flour: You need 4 & 1/2 cup of flour, preferably bread flour.

Butter: Use 6 teaspoons, and make sure it is softened, or else recipe will not work.

Eggs: These have to be 2 large eggs at room temperature.

Rising Agents: 2.5 teaspoons of active dry yeast will make it perfectly to the right degree of fluffiness.

Milk: One and a quarter cups fits well, but it has to be warm. You can use water instead.

Sugar: 1/4 cup of granulated white or brown sugar is perfect here.

Salt: 1/2 teaspoon reinforces the taste of the other ingredients.

Sesame Seeds: A generous sprinkle is necessary for topping.

For the Date Filling

Date Paste: Two 13 oz. packages are used. You can buy them from stores or prepare them at home.

Ground Cardamom: It gives the paste a tangy taste.

Butter: 1 stick of melted butter makes the paste smooth and soft.

For the Egg Wash

Egg: You need one whisked egg.

How to Make the Date Brioche?

To Prepare the Dough

To make the dough, whisk together warm milk, sugar, and yeast in a large bowl until the yeast is dissolved. Then, cover the bowl, and let it froth for 5-10 minutes. Once bloomed, add the flour, eggs and salt. After that, mix them all by a stand mixer on medium speed for two-five minutes. Then, cover it, and let it rest inn a warm place for 10 minutes.

Once done, add the dough to the mixer again, and add the softened butter in 3 parts, letting the mixer knead it until it is smooth. Finally, cover and let it rise in a warm place until doubled. When it is doubled, punch down the dough, divide it into 16 equal-sized balls. Cover the balls, and let them rest for 5 minutes.

To Make the Date Filling

For the date filling, add the packaged date paste, spices, and melted butter into a bowl and knead well until you get a soft dough. When you spread and fill the dough, place it on a baking sheet lined with parchment and brush with egg wash and sesame seeds. Bake at 425 F for 7-12 minutes or until golden.

Ingredients
  

The Dough

  • cups flour preferably bread flour
  • 6 tablespoons softened butter
  • 2 large eggs
  • cups milk warm
  • ¼ cup granulated white or brown sugar
  • ½ teaspoon salt
  • A generous sprinkle of sesame seeds
  • teaspoons active dry yeast

The Date Filling

  • 2 13-ounce packages date paste
  • teaspoons ground cardamom
  • teaspoons ground cinnamon
  • 1 stick melted butter

The Egg Wash

  • 1 whisked egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions
 

To Prepare the Dough

  • Once bloomed, add the flour, eggs, and salt.
  • Mix them all with a stand mixer for 2-5 minutes. It should look like a dough but it won't be soft.
  • Cover it and leave it to rest in a warm place for ten minutes.
  • Once done, bring it back to the mixer, and add the softened butter in 3 parts, letting the mixer knead it until it becomes smooth. I have my mixer on medium speed.
  • Cover and let it rise in a warm place until doubled.
  • When it is doubled, punch down the dough, and divide it into 16-18 equal-sized balls.
  • Cover the balls, and let them rest for 5 minutes.

To Make the Date Filling

  • Add the packaged date paste, spices, and melted butter into a bowl.
  • Knead well until you get a soft dough.

To Bake the Buns

  • When you spread and fill the dough, place it on a baking sheet lined with parchment. Spread each dough ball thin, but not paper thin.
  • Brush the buns with egg wash and sprinkle sesame seeds, shredded coconut, or even pistachios.
  • Bake at 425 F for 12-17 minutes or until golden.

  • The more you roll out each dough ball, the less thick it’ll be. I like thinning them out to be about 6 inches in width.

The dough is soft and perfect. Follow the instructions and you really cants go wrong. Pay attention to your ratios as well! Knowing your bread to date paste ratio makes a difference!

    What’s the alternate of date paste if it’s not available. Can we make our own?

      yes, soak some mejdool dates in hot water for 10 minutes. drain, add to a food processor with a little bit of water until you get the consistency.

    This recipe is A+! My first time making brioche and it was so easy and turned out perfect..
