For The Strawberry Compote
4cupsfrozen strawberries
1¼cupsgranulated sugar
zest of 1 lemon
1tablespoon lemon juice
2cupswater
3tablespoons cornstarch+ 2 tablespoons cold water
For The Cream
16ouncesmascarpone cheese
2cupsheavy whipping cream
1¼cupspowdered sugar
1teaspoonvanilla extract
Instructions
To Make the Strawberry Compote
Add the frozen strawberries to a pot. Do not thaw.
Add them to a pot on medium-high heat along with the sugar, lemon zest, lemon juice, and 2 cups of water.
Mix well and let it cool down for 5-10 minutes, stirring occasionally so they don’t burn. You want them to be extremely soft.
Mix until thickened before removing from the heat to cool completely. I prefer doing the additional step of blending them using an immersion blender, but you can keep them as is. Reserve 1 1/2 cups of compote to dip the lady fingers, or use milk instead.
To Make the Cream
Beat the mascarpone, heavy cream, powdered sugar, and vanilla together. Whisk for about 10 minutes until stiff peaks appear.
To Assemble the Strawberry Tiramisu
Lightly dip each ladyfinger into the reserved strawberry compote and layer 1 time at the bottom of your pan. Add the cream layer and spread it evenly.
Add half of the cooled strawberry compote.
Dip the biscuits again and layer once more.
Add the final layer of mascarpone cream and finally finish it off with a layer of compote.
Top with powdered sugar or crushed freeze-dried strawberries.
Cool your tiramisu and set it for 6 hours in the fridge. Serve your amazing Strawberry Tiramisu. Enjoy!
Notes
If you don’t have ladyfinger cookies, you can use vanilla cookies instead.
Make sure that the ingredients of the cream layer, like mascarpone cheese and whipping cream, are at room temperature in order to mix together more easily.
Whisk the cream until stiff peaks appear. This helps to thicken the filling and sets the texture of no-bake tiramisu.
For the best results, chill the tiramisu for at least 6-8 hours before serving to allow for the ladyfingers to soften up and for the filling to set.
Make sure the compote is room temperature before using!
You can dip the lady fingers into the compote, or use milk!
