Blueberry Cheese Brioche Buns

Delicious, bakery style blueberry cream cheese danish buns that are filled to the brim with berries and a delicious cheesecake- like filling.

Ingredients
  

Brioche Dough

  • 4 cups All purpose flour
  • 1 ½ cups Warm milk
  • 2 ¼ teaspoon Instant yeast
  • ½ cup Granulated sugar
  • teaspoon Salt
  • 1 Large egg room temp, beaten
  • 6 tablespoons Unsalted butter softened

Blueberry Cheese Filling

  • 16 ounces Cream cheese softened
  • cup Heavy cream
  • 1 cup Powdered sugar
  • 2 teaspoons Vanilla extract
  • pinch Salt
  • Fresh or frozen blueberries *if using frozen, do not thaw
  • Fresh strawberries quartered
  • Strawberry jam optional
  • 1 Large egg whisked

Crumble Topping

  • ½ cup Unsalted butter melted
  • cups All purpose flour
  • ½ cup Brown sugar
  • teaspoons Ground cinnamon

Instructions
 

To Make the Brioche Dough

  • In the bowl of a stand mixer, add the warm milk, instant yeast, granulated sugar, salt, and the large egg. Mix well with a whisk.
  • Add in the flour, and use the dough hook on low speed to mix together for 3-4 minutes. You should see the dough come together.
  • Once the dough comes together, slowly drop in the room temperature butter, 1 tablespoon at a time. Bump up the speed to 3 on the stand mixer so it isn't as slow but it isn't too fast.
  • Once you add in the butter, you should have a soft and pliable. It will be the tiniest bit sticky. Transfer to an oiled bowl, and cover. Let it rest in a warm spot to rise until doubled in size, about 1-2 hours..
  • Preheat the oven to 375 °F (once dough has risen)
  • Once risen, transfer the dough to a clean surface (without punching it down) and divide into 12-15 balls. Shape each dough piece into a smooth and round ball and set aside while you make the filling.

To Make the Filling

  • To a bowl of a stand mixer or using a hand mixer, beat the cream cheese until smooth.
  • Add the heavy cream and vanilla extract.
  • Add the pinch of salt and powdered sugar and beat until completely smooth.

To Make the Crumble Topping

  • Combine the melted butter, brown sugar, cinnamon and all purpose flour together in a bowl. Mix well until crumbly. To get finer crumbs, rub a clump of topping between both palms.

Assembly

  • Line a baking sheet with parchment paper.
  • If you're making 12 buns, these are gonna be big, so only bake 6 per tray.
  • Grab one dough ball at a time and transfer it to the lined tray. Use your fingers to make indentations in the middle and stretch it out to make a circle about 5 inches in diameter.
  • Brush the edges with the whisked egg.
  • Fill the bun with cream cheese filling, and top with frozen or fresh blueberries.
  • IF you're making strawberry buns, add a tablespoon or so of strawberry jam and top with quartered strawberries.
  • Add the crumble topping to the edge of the pastry
  • Bake at 375 °F for 20-30 minutes, rotating the pan half way. The edges should be a golden color.
  • Once out of the oven, let it sit for 10-15 minutes before moving to help it set.
