Ingredients for Making these Blueberry Brioche Buns
Not many ingredients are needed to make these come out fabulous.
You’ll need these to make the dough:
All purpose flour: The base of the brioche dough.
Softened butter: A must have to create soft and fluffy brioche.
Large egg: Brioche dough needs egg to help it stay moist and fluffy.
Sugar: To add sweetness to the dough and to activate the yeast.
Instant yeast: To get the dough to rise and not be doughy.
Milk: Warm milk adds more moisture to dough than water!
Salt: Just a pinch to balance out the flavors.
Ingredients To Make The Blueberry Cheese Brioche Buns Filling:
Cream cheese: For the cheesecake like filling.
Heavy cream: To add lightness to the cheese.
Powdered sugar: To ensure the filling is smooth and not grainy.
Vanilla extract: For a bump of flavor.
Salt: To balance the sweetness of the sugar.
Fresh or frozen blueberries: The star of the show!
Fresh strawberries: If you’re a blueberry hater, strawberries are a great substitute.
Strawberry jam (optional): To add an extra kick to the strawberry buns.
Large egg, for egg wash: To give the crumble something to stick to.
For the crumble:
Unsalted butter: To allow the remaining ingredients to melt into each other.
All purpose flour: The base of the crumble and what makes it crumbly and crunchy.
Brown sugar: For the iconic crumble texture.
Cinnamon: to give it a kick of flavor. It works well with the cheesecake buns.
How to Make These Delicious Blueberry Danishes:
There are (unfortunately) a few steps needed to make these cheesecake brioche buns and to ensure they taste great.
First, you need to make the brioche dough. Brioche sounds intimidating, but it just needs a few steps.
To start, in the bowl of a stand mixer, add the warm milk, instant yeast, granulated sugar, salt, and the large egg. Mix well with a whisk.
Now, add in the flour, and use the dough hook on low speed to mix together for 3-4 minutes. You should see the dough come together.
Once the dough comes together, slowly drop in the room temperature butter, 1 tablespoon at a time. Bump up the speed the stand mixer so it isn’t as slow but it isn’t too fast.
After you add in the butter, you should have a soft and pliable. It will be the tiniest bit sticky. Transfer to an oiled bowl, and cover. Let it rest in a warm spot to rise until doubled in size, about 1-2 hours.
Once risen, transfer the dough to a clean surface and divide into 12-15 balls. Shape each dough piece into a smooth and round ball and it’s ready to stuff.
Now, to make the filling, to a bowl of a stand mixer or using a hand mixer, beat the cream cheese until smooth.
Add the heavy cream and vanilla extract.
Add the pinch of salt and powdered sugar and beat until completely smooth. Your filling is now ready!
To make the crumble, it’s as easy as combining the melted butter, all purpose flour, sugar and cinnamon. You can rub the mixture between your palms to make the crumbles into finer pieces.
Top the dough with the filling and the crumble and bake until golden. Once out of the oven, let them set for 10-15 minutes and you are ready to enjoy these delicious blueberry cheese brioche buns!

Ingredients
Brioche Dough
- 4 cups All purpose flour
- 1 ½ cups Warm milk
- 2 ¼ teaspoon Instant yeast
- ½ cup Granulated sugar
- ⅛ teaspoon Salt
- 1 Large egg room temp, beaten
- 6 tablespoons Unsalted butter softened
Blueberry Cheese Filling
- 16 ounces Cream cheese softened
- ⅓ cup Heavy cream
- 1 cup Powdered sugar
- 2 teaspoons Vanilla extract
- pinch Salt
- Fresh or frozen blueberries *if using frozen, do not thaw
- Fresh strawberries quartered
- Strawberry jam optional
- 1 Large egg whisked
Crumble Topping
- ½ cup Unsalted butter melted
- 1½ cups All purpose flour
- ½ cup Brown sugar
- 1½ teaspoons Ground cinnamon
Instructions
To Make the Brioche Dough
- In the bowl of a stand mixer, add the warm milk, instant yeast, granulated sugar, salt, and the large egg. Mix well with a whisk.

- Once you add in the butter, you should have a soft and pliable. It will be the tiniest bit sticky. Transfer to an oiled bowl, and cover. Let it rest in a warm spot to rise until doubled in size, about 1-2 hours..
- Preheat the oven to 375 °F (once dough has risen)
- Once risen, transfer the dough to a clean surface (without punching it down) and divide into 12-15 balls. Shape each dough piece into a smooth and round ball and set aside while you make the filling.
To Make the Filling
- To a bowl of a stand mixer or using a hand mixer, beat the cream cheese until smooth.
- Add the heavy cream and vanilla extract.
- Add the pinch of salt and powdered sugar and beat until completely smooth.
To Make the Crumble Topping
- Combine the melted butter, brown sugar, cinnamon and all purpose flour together in a bowl. Mix well until crumbly. To get finer crumbs, rub a clump of topping between both palms.
Assembly
- Line a baking sheet with parchment paper.
- If you're making 12 buns, these are gonna be big, so only bake 6 per tray.
- Grab one dough ball at a time and transfer it to the lined tray. Use your fingers to make indentations in the middle and stretch it out to make a circle about 5 inches in diameter.
- Brush the edges with the whisked egg.
- Fill the bun with cream cheese filling, and top with frozen or fresh blueberries.
- IF you're making strawberry buns, add a tablespoon or so of strawberry jam and top with quartered strawberries.
- Add the crumble topping to the edge of the pastry
- Bake at 375 °F for 20-30 minutes, rotating the pan half way. The edges should be a golden color.
- Once out of the oven, let it sit for 10-15 minutes before moving to help it set.
