Ingredients

  • ¾ cups unsalted butter (12 tablespoons)
  • 3 tablespoons oil any, even olive oil works. You wont taste it.
  • 3 large eggs room temperature
  • ½ cup unsweetened cocoa powder
  • ½ cup light brown sugar, packed
  • cups powdered sugar
  • ½ cup all purpose flour
  • ½ teaspoon espresso powder Optional
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate (chips or bar, chopped) (6oz) (170g) For melting *See Notes Below
  • ¾ cup Semi-sweet chocolate chips (125g) For mix in
  • ¼ teaspoon salt

Instructions

  • Preheat the oven to 350℉
  • To start, set a pot of water to boil on the stove. We will use this as a double boiler to to melt the butter and chocolate in a large bowl. This method ensures we use one bowl only!
  • Once the water is boiling, add a heat proof bowl on top of the pot. Make sure the bottom of the bowl isnt touching the water.
  • Add the butter and the 6 ounces chocolate chips or chunks. Use a spatula to keep mixing around until fully melted and smooth.
  • Add the cocoa powder, oil, vanilla extract, espresso powder, and and mix until completely smooth. Set aside to cool for 10 minutes.
  • Once slightly cooled, add in the eggs, brown sugar, and powdered sugar. Whisk well until no longer lumpy.
  • Add in the flour, salt and mix with a spatula.
  • Toss in the remaining 3/4 cup chocolate chips or chunks, mix, and transfer to a lined 8×8 square inch pan.
  • Bake in the preheated oven for 30-35 minutes.
  • Remove from the oven and let it cool for an hour before slicing.

Notes

  • 6 ounces is a little less than 1 cup but more than 3/4 cup of chocolate chips. If you have a kitchen scale, its best to use it here.
  • For the best and easiest slicing, use a plastic knife.
  • Let it cool for an hour before cutting and serving.
  • You can also not use a water bath and melt the butter and chocolate in a pan on the stove or in a microwave then transfer to a bowl, but this method makes less dishes.
