For the Cauliflower

  • 1 large head cauliflower
  • 1 teaspoon coriander powder
  • 1 teaspoon garlic powder
  • ¾ teaspoon Aleppo pepper
  • ½ teaspoon turmeric
  • ½ teaspoon salt
  • 3 tablespoons oil

For the Bell Pepper and Onion Mixture

  • 3 tablespoons oil
  • ½ large yellow onion finely diced
  • 5 cloves garlic
  • 1 bell pepper any color, finely diced

For the Sauce

  • 1 cup tahini
  • 2 cups warm water
  • ¼ cup lemon juice
  • 3 tablespoons yogurt (you can add vegan yogurt)
  • 1 teaspoon salt
