Additions And Variations

Cooking is rarely a one-way street, many methods can be used to make a particular recipe. Same for this dough, different people make it in different ways. So here are things that can be added to a dough.

Adding a whole egg provides a richer flavor and better browning characteristics. It also improves the crispiness of your baked goods. Now, if you want your baked goods to be crispier without adding eggs, you can simply leave them in the oven for a little longer.

Some like to add yogurt to their dough in order to tenderize it. It is usually added to a self-rising flour to create a shortcut dough with only 2 ingredients. Self-rising flour is a mixture of all-purpose flour, salt, and baking powder.

Tips You Need To Know

If your dough is too sticky, add some flour and knead it until you’re satisfied with the consistency.

Make sure to use the correct type of yeast. In this small batch dough recipe, I went for active dry yeast.

If you’ve over-kneaded your dough, leave it a little longer to rise before shaping it.

In case your dough is too runny, then you have probably added more water than you should. To fix it, gradually add flour and knead until you get the desired consistency.

Ingredients

  • 2⅔ cups flour
  • ¼ cup oil
  • ¾ tablespoon active dry yeast
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • tablespoons powdered milk optional
  • 1 cup warm water (or warm milk)

Instructions

  • Mix 1 cup of flour with the yeast, sugar, salt, baking powder, and powdered milk if using.
  • Once mixed, add the warm water or warm milk, and whisk together well until no longer clumpy.
  • Cover and set aside in a warm place for 10 minutes.
  • After 10 minutes, you should see the mixture look bubbly and frothy.
  • Now, add the remaining 1 cup of flour and the oil.
  • Mix in your stand mixer, or by hand, until a smooth and soft dough forms, about 5-7 minutes.
  • Now it's ready to use!

Notes

  • If your dough is too sticky, add some flour and knead it.
  • Make sure to use the correct type of yeast. In this small batch dough recipe, I went for active dry yeast.
  • If you’ve over-kneaded your dough, leave it a little longer to rise before shaping it.
  • If your dough is too runny, then you probably added more water than you should. To fix it, gradually add flour and knead until you get the desired consistency.
  • Attention! The water or milk you use should be warm. You can test it with your fingertip. If it is too hot, it would kill the yeast. Then, your dough will not rise. If it is cold, the yeast will take longer to activate and your dough will need a longer time to rise.
  • I recommend an eggwash for any CLOSED pastry you make with this dough. Honeycomb bread, buns, spinach pies, closed meat pies, stuffed buns, etc.
