Even the best bakers run into mishaps, but don’t worry, these quick fixes will save your recipe every time!

Dry or Tough Dough: If your dough feels too dry or firm, gradually add warm milk or water, kneading until it becomes smooth, soft, and pliable. This restores the moisture and ensures your dough bakes up fluffy.

Sticky Dough: A sticky dough is easy to fix! Sprinkle in a little all-purpose flour, kneading as you go until the dough holds together without sticking to your hands. Aim for a soft, elastic texture.

Dough Not Rising: If your dough hasn’t doubled in size within 10–15 minutes, give it a little more time in a warm spot. Still no rise? Chances are your yeast is expired, always use fresh, active yeast for the best results.

Runny or Overly Wet Dough: Too much liquid can leave your dough runny. Slowly add one tablespoon of flour at a time while kneading until you reach the right consistency, soft, smooth, and slightly springy.


This dough needs around 10 minutes to rise. You can leave it a bit longer for a better texture.

If you are making buns or cinnamon rolls, allow them to rest for 5–10 minutes after forming the dough into balls. But if you are making cheese and meat pies, you can skip this step.

Spray cooking oil or put olive oil on your hands to make it easier for you to work with the dough, especially if you are turning it into balls.

Cover the dough mixture with a blanket or two. You can also place it next to a heat source, like a chimney in the winter or the top of a stove while preheating it. This will help the mixture rise quickly.

Ingredients
  

  • 5 cups all-purpose flour
  • ½ cup vegetable oil corn oil, canola oil, or olive oil
  • 1 tablespoon active dry yeast
  • 1-2 tablespoons sugar ¼ cup for sweeter dough
  • 3 tablespoons powdered milk optional, see notes
  • 1 teaspoon salt
  • 2 cups warm water or warm milk for softer dough
  • 1 teaspoon baking powder

Instructions
 

  • In a large bowl, start by mixing the following 2 cups of all-purpose flour, active dry yeast, sugar, baking powder, powdered milk, and salt. Then, add warm water. I recommend using warm milk for a softer dough.
  • Mix them all together until it's smooth using your hands or a stand mixer. It'll be liquidly, but that's fine. Cover it, and let it sit in a warm place for 10-15 minutes until it becomes bubbly. You can cover it with a blanket or two.
  • Once the 10 minutes are over, add 3 cups of all-purpose flour and the oil to the dough. Mix them well.
  • Knead it for about 5-10 minutes. It will come together really quickly.
  • Now, it's ready to use for anything your family asks for.
  • Check notes for which doughs I recommend an eggwash for.

Notes

  • This dough needs around 10 minutes to rise. 
  • Spray cooking oil or put some oil on your hand to make it easier for you to work with the dough especially if you are turning it into balls.

    I used a slightly different recipe (one 10 min dough in the zaatar cheese bread recipe). I used the 1 cup warm milk only cuz I happen to have milk in the house. I used one tbsp sugar. Very easy, very fluffy, very easy to work with. Would make this again 100%.

  14. Do you add the 2 cups of warm milk or water, in ADDITION to the powdered milk dissolved in one cup of warm water?

      The total amount of liquid used is 2 cups. It can be just water or a mixture of water and milk. If you’re using milk, you can skip the powder.

  15. Hi. Does the recipe mean we have to use a total of 4 cups of milk if I replace the powder milk and water with liquid milk?

    1. Hello, no not at all. In total there will only be 2 cups of liquid (water or milk) even if you decided to use the powder. Just add the powdered milk to the flour and proceed as mentioned.

    1. I like to freeze them. I cut the dough into the desired ball size to be ready for next time. pop them on a sheet and freeze like that, and then place into ziplock bags once frozen.

    As a Bosnian that’s Married to Palestinian- I tried to make dishes for my husband since we married 35 years ago- mostly to bring him back home at least with food and at the dinner table.     Love the bread made 6 rolls instead of 4 on small batch, but you don’t seem to have mentioned anywhere that I can see, at what temperature small batch dough and ten minute dough should be cooked and how long for and where in the oven, near the bottom, top or in the middle. I baked at 240 on the shelf below the middle, but kept checking was a bit worried. I would appreciate to know what temperature you cook at.

    1. It just depends on what you use it for. How thick you’re using the dough. Thats why i mention to refer to each recipe that you’d like to use it for:) generally, 450 works for my oven.

        1. Hello! The question was about how to make a gluten free quick dough. Personally, Ive used 3 cups gluten free flour, 1 tsp baking powder, 2 cups yogurt and salt. Knead those together to get a malleable dough that doesnt need yeast. The 1-1 gluten free flour blend would not work in this recipe as it doesn’t work on yeasted recipes.

    A simple, easy to follow recipe which yields excellent results. Tried it the first time when making your Khaliat al Nahl recipe.     Cannot recommend this recipe enough! I’ve been using it since I was in college, I love to use it to make big batches of vegan spinach rolls that I can take to work. The rolls stay perfectly soft, so I don’t mind microwaving them at work because they won’t end up tough or chewy. They hold filling very well too, I sometimes cook up some beyond beef + tomato sauce and make easy little contained sliders with it.
    But it’s so versatile, I make cinnamon rolls with it too! The most delicious base dough that I’ve ever made. Incredible recipe.
